This is not a problem with the map, it is a function of the Garmin GPS, it basically switches to Night Mode on or after the sun has set (it knows this as it receives this information from the satellites).
The maps are designed to be most functional when used in Day mode; they will work in Night mode, but you will lose some data as that is what Night mode does.
You can either live with it (it switches back to Day Mode, when the sun is up), or simply disable the Night function via the menus on the GPS. Please see the Garmin manual for your model for details on how to do this.
On most Garmin (handheld) devices, you will find the setting under, Setup -> Display -> Colors
Simply toggle the setting from Auto to Day.
Please Note: The latest firmware on the Fenix 7, Epix Gen 2, Forerunner 955/956, etc. also now supports different colour modes (Day/Night/Auto), so if you don't want it to go into Night mode automatically, then set it to Day instead.
